Ondeh-ondeh is one of the traditional kuih in Malaysia (kuih is term for Malaysian cakes or pastries. They are originally from Melaka and either made from sweet potato or glutinous rice flour. Ondeh-ondeh filled in grated coconut and gula melaka (a palm sugar). The green bit is a glutinous rice flour mixed with sweet potato and flavoured with pandan (screwpine).The cute little onde-onde–also spelled as onde-onde or ‘buah Melaka’ because it looks like Melaka tree fruits. Ondeh-ondeh rolled in with some fresh grated coconut. The palm sugar that’s in it literally bursts in your mouth when you take a bite. They are sweet and very delicious.----------------RECIPE-----------------
1) 100g glutinous rice flour
2) 80ml water
3) 1 teaspoon green pandan paste
4) 60g gula melaka,chopped
5) 50g fresh coconut,grated
6) a pinch of salt
----------------STEPS----------------
Stat boiling water on the stove.
Mix the food coloring and flour together and knead to form the ondeh-ondeh dough.
Cut gula-melka into fine pieces not bigger than the tip of a finger.(The smaller it easier it melts!)
Flatten the dough and place in some pieces of gula-melaka into it.
Finally, form round ondeh-ondeh using hands.(Dosent have to be perfect!)
Lastly, place the ondeh-ondeh into the boiling water. Increase the heat to the max.
As ondeh-ondeh starts to sink, it means its ready to be taken out!
Take out the ondeh-ondeh and mix it with grated coconut.
----------------PRESENTATION----------------
Presentation is extremly essential when displaying foods! We have to choose the right plates, arrange the foods in a proper manner and etc. This is to captivate consumers and they will like it more! We chose a banana-leaf and arranged the ondeh-ondeh in rows of three or two.
----------------SENSORY EVALUATION----------------
The ondeh-ondeh is round, bright-green and medium sized. It will be able to capture consumers attention easily!
However, the flavour is plain and unflavoured as it may not be cooked completely as the gula-melaka was not completely melted. The mourth feel of the ondeh-ondeh was light and slimy!
It was soft, smooth, gooey and fluffy!
But, there was no aroma from the ondeh-ondeh.
Overall, the ondeh-ondeh was pleasant to see and feel but unlikeable to eat.
